All Pizza Kits come complete with Pre Rolled (individually wrapped) Pizza Bases, Pizza Base Sauce and Grated Mozzarella / Cheddar Cheese, with a 3 week shelf life.(kept in fridge)

Shelf Life of 3 weeks kept in fridge and bases can be frozen.

All Pizza Bases are made using the Finest Doppio Zero Flour and Live Yeast.

The Sauce is Cold Blended using the ripest sun Kissed Italian Tomatoes.

The Cheese is a combination of Mozzarella and Mature Cheddar for Maximum Stretch and delicious tang in every mouthful. 70-30%

Production.

The pizza dough daily and each batch of dough is made 10kgs at a time. Once the dough has been mixed it is put into a proofing room at a temperature of 21 degrees Celsius for a period of 3 hours. During this time the yeast is activated, and the dough rises. 

We then knock back the dough and place the tubs into a chiller running at 2 degrees for 12 hours. During this slow rise the flavours are drawn into the dough, giving you that lovely yeasty flavour. 

We then remove the dough from the chiller and cut the balls into the sizes we need for production, in this case (12 inches), the dough balls are cut into 280g balls. They are then hand rolled and returned to the chiller to rest for 2 hours before being rolled and hand stretched to shape. 

Once rolled, they are placed into a stone baked oven to "seal" the dough. We refer to this as "Par cooking" the dough. The idea here is that the dough is not fully cooked, however, it is cooked enough to allow chefs to remove the base from the bag, place it onto a counter and add the sauce and cheese without the need of adding flour to stop the dough from sticking to the work surface. The base is completely workable and as it has been sealed in an individual bag the base has a 3 week shelf life on it.
