Garum Sauce: The essence of Anchovy. Known since the Greeks and much appreciated by the Romans, garum sauce is one of the most exquisite secrets of Mediterranean cuisine. Ideal to complement multiple recipes and preparations. Escata Salsa, based on anchovies, is our reinterpretation of this legendary sauce, brought to contemporary cuisine. Product made from anchovy (Engraulis encrasicolus) brine obtained after the anchovy curing process. The product is treated with a temperature stabilization process (>100ºC) to stop the fermentation process and to sterilize so prevents future fermentation. The liquid is extracted directly from the recipient where anchovies are cured and it’s mixed with other liquids from different aging. Then, it’s thickened to achieve a sauce-like texture
