During the maturing process, heavy weights keep the fish compressed in the brine and then it soon leaches liquid from the anchovies. El Capricho have called it “Salmŭria” or liquid umami, which is obtain after 12-15 months of maturing. Perfect for enhancing flavour, curing and tenderizing, it is very appreciated by Chefs because of its qualities in high end cuisine. The Salmŭria not only works as a seasonning, but as a texture modifier and to prolonge flavors. And last but no least, the Salmŭria makes dishes even more juicy than salt.
