The rainbow trout is from the shallow chalk stream waters of the River Test, famous for its clear sparkling waters and wonderfully nutritious fish. The fish is then slowly smoked using a traditional 'hot smoked' method with Richard's unique and secret blend of botanicals and wood chips, the flavour is sensational. Also found in Hampshire's crystal chalk stream waters is the superfood that is watercress, and we have married these two quintessentially Hampshire ingredients to create Mud's brand new Hot Smoked Trout and Watercress Squiche. These fine ingredients are gently immersed in our totally rich and decadent savoury custard of Goodwood organic double cream and milk, local free-range eggs from the South Downs, a pinch of salt, cracked black pepper and encased within Mud’s unique buttery shortcrust pastry.
